Here is a nifty little trick I learnt about group photography, I don't know where I heard or read it first but it works: make everyone aware that a shot is coming, wait till they pose, take the shot and instantly after that, when they release their poses, take another one. This way you will have the official shot they want from you but you've also got a more spontaneous one that often yields better results.

The same can be applied to portraits, where you can use it to take candid shots even in the middle of a planned photoshoot.
